VINIFICATION

HARVEST Green harvest of the grapes is carried out in July, leaving 3-4 bunches per vine. Normal harvest is done towards the middle of October.
FERMENTATION MACERATION Fermentation is carried out in temperature controlled stainless steel tanks, lasting up to 30 days. Long maceration with submerged cap takes place until the end of December.
AGING Secondary fermentation is carried out in barrels. The wine is then aged for 24 months in French barrique (60% new oak, 40% second passage).

TASTING NOTES

COLOR Deep intense garnet red with orange highlights.
NOSE Charming bouquet with ripe fruit and jammy notes. Cherry, fresh balsamic, and exotic spices show the complexity of the wine.
TASTE Full-bodied and lively with chewy, yet round tannins and a long, deep, fruity finish.
ALCOHOL 14% abv
AGING POTENTIAL 7-10 years
SERVING TEMPERATURE 18° C – decanting a few hours before serving is suggested.
FOOD PAIRING Excellent with roasted meat and savory game. Rich pasta, mushroom, white truffle, salami, and aged cheese are the perfect match.
