VINIFICATION

HARVEST Green harvest of the grapes is carried out in July, leaving 3-4 bunches per vine. Normal harvest is done towards the middle of October.
FERMENTATION MACERATION Fermentation is carried out in temperature controlled stainless steel tanks, lasting between 18-20 days. The fermentation is completed with submerged caps for an additional 2 months.
Natural decanting and aging in barrique.
AGING Secondary fermentation is carried out in barrels. The wine is aged for a total of 4 years in French barrique (60% new oak, 40% second passage). After bottling, the wine rests for an additional year.

TASTING NOTES

COLOR Deep intense garnet red with orange highlights.
NOSE Charming bouquet with ripe fruit and jam. Cherry, fresh balsamic, and exotic spices show the complexity of the wine.
TASTE Full-bodied and lively with chewy, yet round tannins and a long, deep, fruity finish.
ALCOHOL 14% abv
AGING POTENTIAL 10 years
SERVING TEMPERATURE 18°C. decanting a few hours before serving is suggested.
FOOD PAIRING Excellent with roasted meat and savory game. Rich pasta, mushroom, white truffle, salami, and aged cheese are the perfect match.
